Originally from Burgundy, Chardonnay is the most cultivated international grape in Sicily, where it has found an ideal microclimate, clayey and calcareous soils and a cool and ventilated habitat.
The fruit is characterized by medium-sized berries with a tender skin and a golden yellow color.

From the vinification we obtain wines with a good alcohol content, a fruity aroma, an elegant and harmonious flavor. When aged it takes on notes of dried fruit.
It is particulary suitable for aging in barrique

Inzolia

Of Norman origin, Inzolia is among the oldest white berry vines growing in Sicily. It is heavily present in the western part of island, especially in the area near Marsala and Trapani, where the growth of the grapes is favored by the microclimate and the thermal excursion.

Grecanico

Introduced in Sicily from Greece, it is one of the most ancient Sicilian native vines. Today this vine occupies most of the island's vineyard area, with a greater concentration in the area of ​​Trapani and Marsala.

The berries are moderately large, round in shape with thick gold-colored skins.

Vinified in purity they give rise to a doratom yellow wine with a bouquet of grape, pineapple, peach and white flowers. On the palate it is fresh, balanced mineral and sapid.

Catarratto

Sicilian native white berry wine, it is mostly present in the area near Trapani. Its origin is lost in the mists of time and its one of the oldest vine varieties present in Sicily. Its name means “abundance” because of the large quantity of grapes the vine produces.

Pinot Bianco

It probably originates from genetic mutation of either Pinot Nero or Pinot Grigio and it is one of the vine varieties of French origin cultivated all over the world.

It grows very fast and that allows it to be cultivated in regions considered to be “extreme” like Germany.

From the vinification process it is obtained a delicate yet full-bodied wine with a good level of acidity. It can also become sparkling wine.

Cabernet Sauvignon

Originally from the area near Bordeaux, it is surely one of the most renowned vine variety. Born spontaneously from a cross between Cabernet Franc and Suavignon Blanc, it is characterized by the incredible adaptability to any kind of soil.

Merlot

Originally from Gironde. Merlot arrived to Italy in 1880 and thanks to its ability to adapt easily it soon became, along with Chardonnay, one of the most renowned and cultivated vine variety.

Nero d'Avola

Considered the most Sicilian red berry wine. It is also the best know and requested around the world. Its presence on the island dates back to the Phoenician period but its cultivation began thank to the Greeks.

Harvest

The Principe di Corleone grape harvest process starts in the middle of August for Chardonnay and White Pinot. It continues in September when the time is ripe to harvest Nero d'Avola, Cabernet Sauvignon and Merlot varieties and comes to a close in October with the harvesting of Inzolia, Catarratto and Grecanico grapes.
